gratuity

Furthermore, New York mag madly declares 25 per cent as a now standard tip-rate in restaurants and anything under 20 (once considered generous) as unethical and 'rude' - whether the service you received was worth it or not. And that really goes to the crux of this transatlantic culture clash.

Because, far from mechanically following industry-set rules, us Brits prefer to tip on our own terms and be a little more discerning. We like to reward the extra mile, as opposed to overcompensating someone simply doing the job they're paid to do.

Yes, Brits now more commonly see a gratuity charge automatically added to bills on meals – usually around 10 per cent – but servers also know not to expect blind compliance.

The UK tourist board, Visit Britain, notably advises people to question any establishment asking for more than this – though we don't need encouragement. Many Brits will quibble about a compulsory surcharge not because of an inherent meanness or unwillingness to tip at all, but because we prefer to decide these things for ourselves.
(Caroline Bullock.Americans think we crazy Brits are bad tippers. But wait - why ARE you paying up to 25 per cent extra to help millionaire restaurant bosses pay their servers less? The Daily Mail. April 23, 2023.)

The restaurant industry is littered with multi-millionaire owners bemoaning soaring operating costs and making ever more cuts while still personally reaping the rewards with their extravagant lifestyles. A blame game targeting customers who they expect to make up the shortfall can be a useful narrative to divert attention from the inadequate wages they pay their staff.
